This is not a hate post. I love shawarma. Bengaluru loves shawarma too. Late nights, afterparty hunger.it’s reliable. It’s comforting. It shows up when nothing else is open, but unfortunately, it’s not even shawarma. I grew up eating shawarma from its very birthplace: the Middle East. Once you’ve had that version, you start noticing small things and details in every bite. Like... why is there cabbage in here? Who invited a truckload of mayonnaise? And why is it wrapped in three blankets of rumali roti? More fillings, more sauces, bigger portions, louder flavors. A chicken roll? Yes. A shawarma? Absolutely not,not even close. And it is infuriating.

Call me the Gordon Ramsay of shawarmas but a real shawarma does NOT need that kind of validation. Well-marinated meat, slow-roasted for hours, shaved fresh, couple of pickles for balance, two fries (not a handful, but TWO). Garlic sauce or hummus to bring it all together. Bread that knows it's job and does it well. That's it, the simplicity and minimalism that goes into a tasteful shawarma. The benchmark for me will always be Mama Noura in Riyadh. Its not a shawarma, its THE shwarma. Honestly, might've ruined me for life. Bengaluru has a shawarma joint that closely comes to just that. King of Taste, Kammanahalli gets this. It feels intentional, its simple, wrapped in saaj, perfectly seasoned rotisserie chicken, 2 fries with pickles and garlic sauce. It really is that simple, every bite is the perfect bite. Do your favourite food some justice, try the hummus shawarma an actual shawarma. It skips the foreplay and goes straight to climax, Its the girl you saw once in the airport but will never find her again, but i guarantee, the first bite and you'll always find your way back to it.
